Rancimat: A Rapid Approach to Detecting Oxidative Deterioration of Oils

As the global population increases, the amount of food consumed rises daily. In this context, parallel to rising consumption of edible oils—a fundamental component of foodstuffs—the necessity emerges to ensure that oil reaches consumers without deterioration of its existing quality. For many years, synthetic antioxidants such as butylated hydroxyanisole, butylated hydroxytoluene, and tertiary butyl hydroquinone have been used as food additives to prevent or delay such deterioration. However, recent research indicates certain safety concerns and health risks (toxic and carcinogenic effects) associated with the use of synthetic antioxidants.
Natural antioxidant substances derived from various biomass sources are already known to consumers as safe because they are additives that people have mixed with their food and consumed for centuries. Consequently, examining the stability of food products containing oils is a research-worthy field due to health concerns related to consumers. Determining lipid oxidation in oils is therefore extremely important. To examine this oxidation process, certain instrumental analyses and test methods have been developed under accelerated conditions.
In this session of our 2022 guest speaker chemistry webinars, we are hosting Prof. Dr. Selin Şahin Sevgili from Istanbul University-Cerrahpasa, Faculty of Engineering, Department of Chemical Engineering, who conducts research on the "Rancimat Method," one of these accelerated test methods also known as the Practical Oxidation Test.
