Nur Ecem Baydı Ozman reminds that care must be taken to use vegetables and fruits that are not rotten when making pickled vegetables, stating "While good bacteria multiply during fermentation in pickled vegetables, harmful bacteria spreading from rotten parts of vegetables or fruits can also multiply and negatively affect intestinal health, and therefore the immune system." Thanks to the prebiotic fibres in pickled vegetables and probiotic beneficial bacteria, they protect intestinal health and can indirectly help us get through seasonal illnesses such as colds and flu more mildly.

Prevention of Many Diseases

Vegetables and fruits used in making pickled vegetables have a prebiotic effect because they contain fibre in high amounts.
