Ingredients: 2 artichokes, 1 lemon, ¼ bunch parsley, 1 cup basmati rice. Instructions: Boil the artichokes in a pot with 1 cup of water added, adding the juice of half a lemon. In a separate pot, add 1 tablespoon of olive oil and basmati rice, then add the remaining cooking water from the artichoke with 1 cup of hot water and cook. As the rice nears completion, add the diced artichokes and chopped parsley to the pot, stir and let rest for 5-10 minutes.
